Chocolate Chip Cookie Dough Bites

Hi Ya'll! I meant to get this posted over the weekend, but I'm lazy.. I have no real reason for not posting. I did manage to get two book reviews done and started working on my birthday post so that's something right? Not completely lazy..

Anyways before we move onto this yummy super easy recipe, I would like to share a blog with you. Someone I use to know back in my Oregon life has started a blog called From Coupons to Canning where she posts about anything and everything pertaining to, you guessed it, Coupons to Canning. There is a great post on how to make your own vanilla extract. Also she is hosting a giveaway right now for some amazing sounding jams!
Go check it out!

Now for some cookie dough bites! I got this amazingly simple recipe from Shugary Sweets.

Chocolate Chip Cookie Dough Bites:

4 oz cream cheese, softened
1/2 cup butter, softened
3/4 cup brown sugar
1 tsp vanilla extract
1 cup flour
1/4 tsp kosher salt
1 cup semi-sweet chocolate morsels
12 oz chocolate coating, melted (you can also use vanilla coating, to dip or drizzle)
Beat cream cheese and butter until creamy. Add sugar and vanilla. Beat in flour and salt. Fold in chocolate morsels. Scoop (about 1-2 tbsp) onto a parchment lined baking sheet. I made really big ones, not really thinking about it, but the husband said I should make them smaller next time.. More bit size instead of regular cookie size..
Freeze for about 2 hours (or overnight).
Using two forks, dip into melted chocolate coating and return to parchment. Drizzle with melted vanilla bark (if you want..) and refrigerate. I also did not do the vanilla drizzle. I didn't have and vanilla bark and did not feel like walking to the store to get some. I will admit they would so much prettier with the drizzle though..

Eat and Enjoy!
