Peanut Butter Coffe Cake

Hi Ya'll! Love Peanut butter? We do! I had bought some peanut butter chips and couldn't figure out what to do with them.. Then I came across this recipe. This coffee cake is awesome! Hope you like it as much as we did! I will have another peanut butter chip recipe coming soon!

Peanut Butter Coffee Cake:

1-2/3 cups (10-oz.-pkg.)  peanut butter chips
3/4 cup creamy peanut putter
2-1/4 cups all-purpose flour
1-1/2 cups packed light brown sugar
1/2 cup butter or margarine, softened
1 teaspoon baking powder
1 teaspoon baking soda
1 cup milk
3 eggs
1 teaspoon vanilla extract

Heat oven to 350°F. Grease bottom of 13x9x2-inch baking pan.
Place peanut butter chips and peanut butter in microwave-safe bowl. Microwave for 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred.

Combine flour, brown sugar, butter and peanut butter chip mixture in large bowl. Beat on low speed of mixer until mixture resembles small crumbs; reserve 1 cup crumbs for topping. To remaining crumb mixture gradually blend in baking powder, baking soda, milk, eggs and vanilla; beating until well combined. Pour batter into prepared pan; sprinkle top evenly with reserved crumbs.

Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. 12 to 16 servings.

Eat and Enjoy!
