Potato Soup

Hi y'all! How's your winter been treating you? We just love winter, because that means its soup season! My husband loves to make soup.. Our winter has been unusually warm this year. Except for this past week when we had snow and ice! That was fun.. But its all clear skies and sunny weather again!

Well, here is the yummy potato soup I promised!

Potato Soup

2-3 large baking potatoes
6 tablespoons thinly sliced green onion
3 tablespoons butter
3 tablespoons all-purpose flour
2 teaspoons snipped fresh dill or chives
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cup milk
1 1/4 cups shredded Tillamook cheddar cheese ( any brand will do, but we love Tillamook)
4 slices bacon, crisp-cooked, drained, and crumbled

Peel and cut potatoes into chunks. Put into pot of boiling water,like your fixin to make mashed potatoes. Let potatoes get tender.

In large saucepan cook 3 tablespoons of the green onion in hot butter over medium heat until tender. Stir in flour, dill, salt, and pepper. Add milk all at once. Cook and stir for 12-15 min, or until thick and bubbly. Add the potatoes and 1 cup of cheese; stir until cheese is melted.

Top each serving with remaining cheese, onion, and the bacon*


Eat and enjoy!

*Chef's note: My husband puts the bacon in the soup mixture. If you wish to do the same, just add the bacon when you add the potatoes and cheese. Same thing with the green onion. The hubs put it in all at one time..
